Chapter 3 — Further Reading

Sources are grouped by how confident we are in them, following the book's citation policy: Tier 1 are works and institutions we are confident exist and can stand behind; Tier 2 are real ideas and practices whose exact publication or precise figures we have not pinned down; Tier 3 is constructed teaching material in this book, labeled where it appears.


Tier 1 — Verified canonical

Danny Meyer, Setting the Table: The Transforming Power of Hospitality in Business. The source for Case Study 1 and the clearest statement anyone has made that a brand philosophy is an operating system rather than a marketing asset. Read it for the priority order — employees, guests, community, suppliers, investors — and for the argument that a stated brand is valuable precisely because it can be violated. Chapter 23 takes the service-versus-hospitality distinction apart properly; this chapter borrows only the part about writing it down.

Ray Oldenburg, The Great Good Place. The origin of the third place — the informal public gathering space that is neither home nor work. Oldenburg's argument is civic rather than commercial, which is exactly why it is worth reading: it will make you notice how much of what the restaurant industry sells under that banner is a room that has been optimized for throughput.

Howard Schultz, "The Commoditization of the Starbucks Experience" (internal memo, February 14, 2007). Leaked and widely republished; the spine of Case Study 2. Two pages, and worth more to an operator than most books on brand. It is a working document about atmosphere depreciating through decisions that improved every number anyone was accountable for.

The U.S. Patent and Trademark Office. Maintains a free, public, searchable database of registered and pending U.S. trademarks, along with plain-language guidance on classes, the application process, and what registration does and does not confer. Run a search before you fall in love with a name; then pay an attorney for a real screening search before you order a sign. Note that restaurant services and packaged food sit in different classes, which matters the day you bottle a sauce.

ASCAP, BMI, SESAC, and GMR — the principal U.S. performing rights organizations. Each publishes licensing information for restaurants and bars, including how fees are structured around occupancy, operating hours, live music, dancing, and admission charges. Read at least two of them; the structures differ, and a venue commonly needs licenses from more than one.

The Americans with Disabilities Act and the U.S. Department of Justice's ADA guidance for public accommodations. Aisle widths, dispersed accessible seating, counter and bar heights, signage, and website accessibility are all live obligations in a dining room. Chapter 8 covers the compliance picture; this chapter's interest is that the accessible room and the hospitable room are the same room. Requirements vary and are interpreted locally — use professionals.

Douglas Robert Brown and Elizabeth Godsmark Rowe, The Restaurant Manager's Handbook. Useful here for the unglamorous operational material this chapter depends on: opening smallwares and tabletop par levels, breakage and replacement planning, uniform programs, and the pre-service checklists that keep a room consistent.

Roger Fields, Restaurant Success by the Numbers. Not a brand book, and that is why it belongs on this list. Read it alongside §3.7 for the habit of forcing every qualitative decision into a capital-and-carry format before it gets approved.


Tier 2 — Attributed, specifics unverified

The sound bands in Figure 3.3. Conversational speech at normal distance sits in the low sixties dBA, and the "comfortable / lively / loud" bands used here reflect widely shared practice among acousticians, designers, and operators rather than a single published standard for dining rooms. The occupational exposure limits published by OSHA and NIOSH are real and apply to workers, not diners; they begin to bite at sustained levels in the mid-eighties. Ranges, not laws — and measure your own room.

The seating-density bands in Figure 3.4. Square-feet-per-seat conventions vary widely across sources, and — more importantly — across what the figure includes. A number computed on dining-floor area only is not comparable to one computed on total front-of-house area, and published figures rarely say which they used. Treat the bands as orientation and compute your own consistently.

Restaurant tabletop breakage and loss in the 35–45% range annually. Widely used as a planning assumption in the industry; it moves substantially with service style, dish-pit design, volume, and staff tenure. Budget it, then measure your own and replace the assumption.

The approximately 75% annual turnover figure used in the uniform-cost calculation appears widely in trade reporting and government data but varies enormously by position, market, and how seasonal separations are counted. Chapter 17 handles it properly.

The claim that noise reduces beverage attachment and shortens dining time. This is consistent with operator experience and with a body of hospitality and consumer research on ambient sound, but the effect sizes used in §3.7 are constructed for teaching. Do not import the $3.50 figure into a real plan — the entire point of the worked example is to show you how to solve for the number your own belief has to beat.

Costs of a name change, signage, acoustic treatment, and identity work. All are illustrative and market-dependent. Sign fabrication and installation in particular varies by an order of magnitude depending on city, landlord requirements, and permit process.


Tier 3 — Illustrative / constructed (labeled in text)

Bellwether, the running business-plan project, and every figure attached to it — the atmosphere schedule in Figure 3.7, the design language table, the measurement targets, and the guest journey in Figure 3.5.

Figure 3.2's naming funnel, including the 60-to-1 ratio and the candidate counts at each gate, is a constructed teaching process, and the name scorecard's scores are an after-the-fact audit written to demonstrate the method.

Figure 3.6, the coded review sample, is a constructed teaching example. The restaurant does not exist; the coding method does, costs nothing, and is the single most under-used measurement in the industry.

All worked calculations in the chapter, exercises, and quiz — the acoustic break-even, the cold table by the door, the candle program, the menu reprint break-even, the host-stand cost — use constructed numbers chosen to make the arithmetic legible.


Where to go next

If §3.3's density and sound material landed, read Chapter 7 (floor plan and capacity) and Chapter 24 (seat turns and revenue management) together — they are where the room's physical decisions become the revenue ceiling.

If §3.4's guest journey landed, go to Chapter 22 (front of house operations) and Chapter 23 (hospitality and the second visit). Nine of your sixteen touchpoints are trained, not bought, and Chapter 18 is where training gets built.

If §3.5 raised more questions than it answered, that is by design — Chapter 10 owns the menu as a commercial instrument, and it is one of the highest-leverage chapters in the book.

If §3.7's arithmetic is the part you want more of, Chapter 31 builds the P&L that the atmosphere carry disappears into, and Chapter 32 gives you the operating-leverage framework that explains why small atmospheric effects on the check matter so much.

And if you are actually planning a restaurant, write your version of Figure 3.7 this week, before you speak to a designer. Appendix C has the blank.
