Part III — The Product: Menu, Cost, Kitchen, and Bar
Chapters 10–16
The menu is the business plan expressed as food.
That is not a figure of speech. A menu is simultaneously a production schedule, a labor model, a purchasing specification, a brand statement, and the single highest-leverage marketing document you will ever own. Every item on it commits you to a supplier, a station, a skill level, a piece of equipment, and a portion of your walk-in. Add one dish and you have added an order line, a prep task, a spoilage risk, and a thing that can be eighty-sixed on a Friday.
This is the longest part of the book, seven chapters, and it is where the arithmetic starts.
What this part does
Chapter 10 develops the menu: the item list, concept fit, skill fit, equipment fit, cross-utilization — the discipline of making one delivery become six dishes — menu size and what each additional item really costs, standardized recipes, and the psychology of layout, sequence, and price anchoring.
Chapter 11 is the costing chapter, and it may be the most important in the book. You will build a recipe cost card line by line. You will learn the difference between as-purchased and edible-portion cost, run a yield test, and discover why your supplier's yield number is not yours. You will price from a target — plate cost divided by target food cost percentage — and then learn when to ignore the answer that produces. And you will meet the variance between ideal and actual food cost, which is the number that tells you what is really happening in your kitchen.
Chapter 12 turns the menu into a portfolio. Menu engineering asks not "what is my food cost?" but "which items make me money, how often, and what do I do about the rest?" Stars, plowhorses, puzzles, and dogs — and, more importantly, the four different actions those quadrants imply, plus an honest account of what the matrix ignores.
Chapter 13 goes to the loading dock, because food cost is not set at the stove. Vendors, specs, par levels, receiving, storage, rotation, the physical inventory count, the usage formula, and the waste log. The walk-in is a financial statement; this chapter teaches you to read it.
Chapter 14 runs a service. A dinner service is a manufacturing run with no inventory buffer and the customer watching. Mise en place as a system, the stations and the line, the pass, ticket times and what a rising number is telling you, eighty-sixing, and production planning.
Chapters 15 and 16 are the bar and the wine list, where the margin lives and the leaks are largest — because the product is liquid, portable, popular, and extremely easy to give away. Pour cost, cocktail costing down to the ice and the dilution, keg math, the tenths method for inventory, and then wine: list architecture, the three-tier system, by-the-glass yield, and the awkward truth that a wine program's margin only exists if somebody sells it.
What you should be able to do at the end of it
- Build a recipe cost card that foots, including yield and a waste allowance.
- Price a plate to a target food cost, and explain when that target is the wrong tool.
- Run a menu-engineering analysis from your own point-of-sale data and act on all four quadrants.
- Set par levels, write a spec, receive a delivery properly, and take an inventory that means something.
- Compute pour cost, cost a cocktail, and find where the bar is leaking.
The project
Bellwether's menu is drafted in Chapter 10 and costed in Chapter 11, where you meet the book's recurring costing lab: the Hearth Chicken, half a wood-fired bird with roasted roots and salsa verde. Eight dollars and fifty-two cents on the plate, twenty-nine dollars on the menu, 29.4% food cost, twenty dollars and forty-eight cents of contribution margin. It is a Star, and it comes back in five more chapters. By the end of Part III the plan's 30% food-cost line and 22% pour-cost line are no longer assertions — they are built from cost cards you can check.
