Chapter 14 — Further Reading

Sources are grouped by the book's three tiers. Tier 1 is verified canonical — institutions, frameworks, and published works we can stand behind. Tier 2 is real industry practice whose exact citation we have not pinned down, given as ranges rather than false precision. Tier 3 is illustrative and constructed — Bellwether and everything attached to it.


Tier 1 — Verified canonical

The FDA Food Code. The federal model code that states, counties, and cities adopt in their own versions and on their own schedules. Relevant to this chapter for the framework governing par cooking: cooking temperatures (poultry to 165°F), the temperature danger zone, two-stage cooling of cooked foods, cold holding at or below 41°F, hot holding at or above 135°F, and reheating requirements. Read the version your jurisdiction has actually adopted, not the model — adoption lags and local amendments are common. Chapter 25 works the food-safety program in full.

HACCP (Hazard Analysis and Critical Control Points). The internationally recognized framework for identifying hazards, setting critical control points and limits, monitoring, taking corrective action, and keeping records. A par-cook program is a textbook HACCP application: it creates a cook–cool–hold– reheat sequence with several control points and no defensible version without records.

ServSafe and food-manager certification. The National Restaurant Association's training and certification program, widely accepted for the certified-food-protection-manager requirement that most jurisdictions impose. The manager certification, rather than the handler card, is the credential relevant to designing a par-cook program.

Auguste Escoffier, Le Guide Culinaire (1903), and the brigade de cuisine. The documented origin of the modern station system. Read for the organizational structure rather than the recipes; Case Study 1 treats it as operations engineering.

Roger Fields, Restaurant Success by the Numbers. The best general treatment of the operator's arithmetic in this book's reference list. Useful here for the linkage between production decisions and the cost lines they move.

Brown and Rowe, The Restaurant Manager's Handbook. Broad operational reference. Its value for this chapter is the checklist-and-procedure material — opening and closing lists, station set-up standards, log formats — which is exactly the kind of thing worth adapting rather than reinventing.

The COVID-19 dining-room closures and the off-premise shift. Documented public record: dining rooms were ordered closed across US jurisdictions beginning in March 2020, takeout and delivery generally remained permitted, and off-premise volume did not return to its prior share after reopening. Case Study 2 reads the kitchen-operations consequences. For the commercial economics — commissions, incrementality, commission-cap ordinances — see Chapter 28.

Bureau of Labor Statistics. The institution to consult for occupational wage data by region when you need a defensible loaded labor rate for the prep-cost calculations in §14.7, rather than borrowing this book's illustrative \$19 an hour.


Tier 2 — Attributed, specifics unverified

Ticket-time benchmarks by service style. Industry guidance generally places full-service entrée ticket times somewhere in the low-to-mid teens of minutes, with quick service far lower and fine dining deliberately longer. Treat any specific number you see — including this chapter's fourteen minutes — as derived from a particular menu on particular equipment, never as a benchmark to import. The useful discipline is the derivation, not the number.

Kitchen display system (KDS) reporting practice. KDS timing metrics are standard in chain casual dining and increasingly common in independents, and speed-of-service targets are a documented management focus in multi-unit operations. The specific gaming behaviors described in Case Study 2 — bumping on plate-up, splitting large orders, firing against forecast — are common enough in industry discussion to be treated as known patterns, but the case presents them as a labeled composite rather than as any company's conduct.

Par-cooking and cook-chill in independent restaurants. Widely practiced, rarely documented. Industry guidance is consistent on the principle — that partial cooking plus rapid, controlled cooling is safe only with monitored, logged temperature control — and inconsistent on the specifics, which is precisely why the FDA Food Code framing and a certified manager belong in the loop.

Prep-to-service labor split. Practitioner guidance commonly puts back-of-house labor at roughly a half to two-thirds split between production (prep) and service hours in a scratch-leaning full-service kitchen, with wide variation by menu. Useful as a sanity check on your own schedule; not a target. Chapter 19 builds the labor model properly.

Kitchen injury and burn exposure. Kitchens are consistently identified as a higher-risk occupational environment for burns, cuts, and slips. This chapter deliberately does not cite an injury rate, because the commonly quoted figures are not traceable to a source we can stand behind. Chapter 25 covers worker safety with the same caution.


Tier 3 — Illustrative and constructed

Bellwether and every number attached to it. The 68-seat plan, the 28-item hourly hearth ceiling, the 44 / 34 / 22 entrée split, the 67% peak fire utilization on a 95-cover plan night, the 144-cover hearth ceiling, the 62 / 78 / 92 / 120 / 123 week, the ticket-time standard, the production sheet in Figure 14.2, the ticket-time report in Figure 14.6, and the wage rates used in the worked calculations are all constructed teaching examples. They are internally consistent and realistic; they are not any restaurant's records.

The Friday night. The second Friday in October — 142 covers, a 40-guest party at 6:30, a grill cook who does not arrive at 3:40 — is a modeled scenario, not a reported event. Bellwether has not opened. It recurs in Chapters 17, 19, 21, 22, and 33, each time from that chapter's angle.

The Hearth Chicken. Cost card frozen in Chapter 11 at \$8.52 against a \$29.00 price. The \$0.71 production-labor overlay computed in §14.7 is an additional operational reading and does not change the card.

The surprise inspection. The Tuesday-morning scenario referenced in §14.8 — walk-in at 46°F, raw chicken above ready-to-eat greens, sanitizer at 50 ppm, no reach-in thermometer, one employee without a food-handler card — is constructed. Chapter 25 works it in full.
