Chapter 10 — Further Reading
Sources are grouped by how confident we are in them, following the book's citation policy: Tier 1 are works and institutions we are confident exist and can stand behind; Tier 2 are real ideas and practices whose exact publication we have not pinned down; Tier 3 is constructed teaching material in this book, labeled where it appears.
This chapter's subject includes a body of widely repeated claims whose evidence is weaker than their circulation. The tiering below is therefore doing more work than usual — read it as part of the chapter, not as an appendix to it.
Tier 1 — Verified canonical
Roger Fields, Restaurant Success by the Numbers. The clearest available treatment of restaurant financial reality for people who are not accountants. Its handling of menu pricing as an output of arithmetic rather than of instinct is the argument underneath §10.7, and its insistence that the menu is a financial document rather than a culinary one is the argument underneath the whole chapter.
Douglas Robert Brown and Elizabeth Godsmark Rowe, The Restaurant Manager's Handbook. The reference a working manager keeps on a shelf. Encyclopedic rather than argumentative. Its checklists for menu development, standardized recipe formats, and production planning are genuinely useful when you are building the documents in §10.5 for the first time.
Danny Meyer, Setting the Table. Not a menu book, and read it anyway. The case that hospitality is a business strategy rather than a soft skill is the reasoning behind the Hospitality callout in §10.6 — that a menu's most important job may be telling a guest whether the room was built with them in mind.
The FDA Food Code, and the fact that states and localities adopt versions of it with local amendments. Directly relevant to §10.5: cooking temperatures, the two-stage cooling requirement, cold holding, and reheating all constrain what a standardized recipe may specify. Published and free. Read your own jurisdiction's adopted version, not a summary of it, and remember that local amendments are real.
Amos Tversky and Daniel Kahneman's work on anchoring and adjustment, and the broader judgment-and-decision-making literature it founded. This is canonical, widely replicated, and the genuine basis for the psychological half of price anchoring in §10.7. What it does not establish is the magnitude of the effect on a restaurant menu, in a dining room, with a guest who has a budget.
Sheena Iyengar and Mark Lepper's choice-overload work (the jam-tasting study) is real, famous, and worth reading in the original — as is the substantial replication literature that followed it and found the effect smaller, more context-dependent, and sometimes absent. Read both halves. The pair is an unusually good education in how to hold a finding at the right confidence.
The COVID-19 dining-room closure orders of 2020 and the industry's response, including publicly reported menu simplification at large chains — for example, McDonald's temporary removal of all-day breakfast in US restaurants to simplify kitchen operations. Documented public record, and the subject of Case Study 1.
Your own point-of-sale vendor's reporting documentation. Unglamorous and the most valuable source on this list. Every attachment rate and order share in §10.7 is a report your system already produces. Learn which report and what it is actually counting before you rely on it (Chapter 26).
Tier 2 — Attributed, specifics unverified
Menu-engineering practice and its literature. Chapter 12 handles this properly; the relevant note here is that the matrix framework associated with Kasavana and Smith is real and widely taught, and that its documented limitations are as instructive as the framework itself. Do not build a menu around it before you have data to feed it.
"Golden triangle" eye-path claims. Widely published in trade press, design courses, and consulting material, and consistently traced back to unpublished consultancy work from decades ago rather than to accessible research. Later eye-tracking work has not consistently reproduced the specific geometry. Treat as folklore with a plausible kernel: position probably matters; the specific triangle is not established.
The claim that removing currency symbols increases spend. Usually attributed to hospitality-school research. Such work exists; reported effects were modest and samples small, and it has been repeated far more often than replicated. Treat as a weakly supported hypothesis, and note that the design case for removing the symbol stands on its own.
Food-psychology research on descriptive menu labels. A substantial portion of the most-cited work in this specific area has been subject to correction and retraction in recent years. If you encounter a precise percentage lift attributed to descriptive naming, check the current status of the paper before repeating it. The underlying practical advice — write descriptions your staff would say out loud — survives on operational grounds.
Menu contraction during and after 2020. The direction is well documented in trade coverage and in operator statements; specific national percentages vary widely by who was counted, over what window, and with what definition of an "item." Case Study 1 deliberately declines to assert one.
Item-count norms by service style — the working conventions that a full-service independent runs somewhere in the twenties to low thirties of food items and that quick service runs far fewer. These are operator convention and trade-press consensus rather than measured findings, and they vary enormously by concept.
Fully loaded labor rates used in §10.4's calculation (\$19.00/hr) and in the exercises. Planning figures chosen for legibility; the real number depends on wage, payroll taxes, benefits, and jurisdiction, and Chapter 19 builds it properly.
Ticket-time norms and station-throughput conventions — the twelve-position hearth, the 60% packing efficiency, the per-item dwell times in §10.4. All practitioner estimates. Any kitchen can measure its own in a week with a timer, and any kitchen should.
Tier 3 — Illustrative and constructed
- Bellwether, the running business-plan project, and everything attached to it: the twenty-two-item dinner menu in Figure 10.2, the brunch menu in Figure 10.9, all prices, all attachment rates, all assumed order shares, the cross-utilization map in Figure 10.3, the station load map in Figure 10.4, the standardized recipe in Figure 10.5, the price ladder in Figure 10.6, the check reconciliations in Figures 10.7 and 10.10, and the change calendar in Figure 10.8.
- The Hearth Chicken as a recurring teaching example. Its menu price (\$29) and its place on the menu are set here; its cost card belongs to Chapter 11.
- The twenty-five-cover Thursday in §10.7 — a constructed seating built so that the food total (\$828 across 25 covers) resolves to exactly \$33.12 per cover.
- The \$3,020 hidden-cost calculation in §10.4 — every input is a constructed planning estimate, and the callout says so.
- The four rejected items (oysters, a fried item, risotto, duck breast) and the reasoning attached to each — constructed to teach the three filters.
- Case Study 2, "The Menu That Tasted the Same" — an explicitly labeled composite. No real business is depicted; its figures are self-contained and do not attach to Bellwether.
- All exercise and quiz scenarios, and all figures within them.
Where to go next in this book
- Chapter 11 costs everything you just wrote. It is the necessary sequel, and the Hearth Chicken's cost card is its centerpiece.
- Chapter 12 turns the menu into a portfolio and replaces this chapter's assumed order shares with measured ones.
