Chapter 15: Beverage and Bar — Packages, Licensing, Consumption, and Responsible Service

Chapter Overview

At 5:22 p.m. the queue at the bar is nineteen people long.

It formed in the eleven minutes since the ceremony ended, because a hundred people walked off a lawn at the same moment and every one of them wanted the same thing. The two bartenders are working well — no fumbling, no chatting, a drink every ninety seconds each. That is forty drinks an hour between them, and there are a hundred people who want roughly a hundred and eighty in the next hour.

By 5:40 the queue is twenty-six. By 6:05, when the passed canapés finally reach the back of it, it is thirty-one, and the people at the end of it have been standing in a line at a wedding for forty minutes.

The bar did not fail. The bar was never going to be able to do it, and that was knowable in month four with a calculator.


The bar is the second-largest food-and-drink line at most weddings and the one planners model least. It is also, uniquely, the line where the client's instinct and the arithmetic point in opposite directions: couples think about the bar as a shopping question — what do we serve? — when it is a rate question. How many drinks, how fast, through how many hands, for how long?

And it is the only category in this book where getting it wrong can end with somebody dead on a road at midnight. That is not rhetoric. It is why §15.5 and §15.6 exist and why they are the sections to read even if you skip everything else.

In this chapter, you will learn to:

  • Compare the four bar models on what they actually cost, not on what they are called
  • Forecast consumption from a guest list rather than from a rule of thumb
  • Turn a drink forecast into a shopping list: bottles, cases, mixers, garnish, and pounds of ice
  • Size bars and bartenders against throughput — and fix a queue for free
  • Ask the licensing and liability questions in the right order, and know which ones you are not qualified to answer
  • Write a responsible-service plan with a name on it

15.1 The Four Models, and What They Actually Cost

Every bar is one of four things, plus a fifth that is a hybrid of two.

The trap in this table: "hosted" and "consumption" and "package" are not four different amounts of generosity. They are three different ways of pricing the same generosity, and which one is cheapest depends entirely on how much your guests drink.

The arithmetic that chooses between them

A package bar at $34 per person for five hours = **$3,400.** Fixed.

A consumption bar billed at $9 per drink. The break-even is:

$3,400 ÷ $9 = 378 drinks = 3.8 drinks per guest

So the choice between them is a bet on your own guest list, and §15.2 is how you stop guessing.

And note the asymmetry. Being wrong toward the package costs you a few hundred dollars. Being wrong toward consumption costs you thousands, arrives as an invoice three weeks later, and is the single most common source of a post-wedding budget shock.

⚠️ Common Pitfall: the consumption bar nobody is watching

A consumption bar bills on what leaves the bottle, and nobody at the wedding is counting. The couple find out on the invoice.

If you use one, three things are not optional: a cap written into the contract ("service to cease and the planner to be notified at $3,600"), a mid-event check at a stated time (Chapter 26 puts it on the run sheet at 8:30), and an agreed count of opening inventory, signed by both sides.

Without the cap, "consumption" means "unlimited," and the client agreed to unlimited without knowing they had.

The cash bar

🚨 When It Goes Wrong: the cash bar is not a money decision

A cash bar at a wedding is, in most Western social contexts, read by guests as a statement — and it is read more harshly than couples expect. Guests who travelled and bought a gift and a hotel room and a dress do not, in general, expect to buy their own drink at the reception.

That is a cultural claim and it is not universal. In some communities and some countries a cash bar is entirely normal. Know which one you are in, and if you do not know, ask the couple's parents rather than the couple.

The three practical problems, which are more decisive than the social one:

  1. A cash bar is a sale. Chapter 9 §9.7: selling alcohol generally requires a licence that furnishing it does not. Some venues cannot legally host one. Some jurisdictions require a different permit entirely.
  2. Somebody has to handle money, which means a till, a card reader, cash on site overnight, and a reconciliation. At a raw site with no cell signal, a card reader is a problem you have not yet had.
  3. It slows the bar by 30–50%, because every transaction now has a payment step. Chapter 11's queue arithmetic gets substantially worse.

The compromise that works: a hosted limited bar — beer, wine, and one or two cocktails, free — with a cash option for anything else. Guests who want their particular bourbon can buy it; nobody stands at a wedding holding a wallet.

What to recommend, most of the time

A hosted limited bar. Beer, wine, one or two batched cocktails, a genuinely good non-alcoholic option, and nothing else.

The objection you will hear: "but Uncle Ray only drinks scotch." Buy one bottle of scotch, put it under the bar, and tell the bar lead about Uncle Ray. That is not a bar model; that is a note.

Verify

  1. Package = 130 × $38 = **$4,940. Break-even = $4,940 ÷ $10 = 494 drinks ÷ 130 = 3.8 drinks per guest. Without further information, recommend the package — not because it is cheaper (it may not be), but because the downside is bounded.** Being wrong on a package costs a known few hundred; being wrong on consumption is unbounded and arrives after the event. Then go and do §15.2 and replace the recommendation with a forecast.
  2. Because the social problem is a matter of degree and audience — some communities find a cash bar normal — while selling alcohol without the right licence is an offence, may void the venue's own licence, and can leave the couple personally exposed. A guest who feels slighted is a bad review. An unlicensed sale is a legal event.

15.2 Forecasting Consumption

This is the section that replaces guessing. It takes about ten minutes and it is the difference between a bar that runs out at 9:15 and one that does not.

The base model

Step 1 — count the drinkers.

Not the guests. From the guest list:

Drinkers = total guests − children − non-drinkers − minimal drinkers

At most weddings that is 80–90% of the headcount, and you know which guests because you built the guest list in Chapter 5 and the dietary matrix in Chapter 14.

Step 2 — apply the rate.

This is the standard trade model and it is conservative in the right direction: it slightly over-forecasts a sedate crowd and slightly under-forecasts a heavy one.

Step 4 — add 10% for spillage, waste, and the bottle that breaks.

Trade term: shrinkage. It is real, it is about 8–12%, and forecasts that omit it run short.

🧩 Productive Struggle

A wedding: 160 guests, of whom 18 are children and 14 are non-drinkers or minimal. Bar open 6:00 p.m. to 11:00 p.m. Guests are mostly in their late twenties and early thirties. There is a hotel block with a shuttle. It is August and the reception is outdoors.

Forecast the drinks. Do it before reading on.

Worked

Drinkers: 160 − 18 − 14 = 128.

Base: first hour 128 × 2 = 256. Hours 2–5 = 128 × 1 × 4 = 512. Base total = 768.

1,200 drinks. That is 7.5 per drinking guest, which sounds enormous until you notice it is one and a half an hour for five hours at a young summer wedding with a shuttle, which is exactly what that is.

The point of doing it this way rather than saying "about 7 or 8": the adjustments are visible and arguable. If the couple say the shuttle is only for the hotel guests and that is thirty people, you change one line and the forecast moves. A rule of thumb cannot be argued with, which means it cannot be corrected.

The mix

A drink forecast is useless until it is split by type, because you buy bottles and cases, not drinks.

Within wine, roughly 60/40 white-and-sparkling to red at a summer or early-autumn wedding, reversing in winter. Sparkling spikes hard in the first thirty minutes and at the toast.

These are starting points. A wedding where both families are Irish and a wedding where both families are Italian have different mixes and everybody involved knows it. Ask.

Turning drinks into things you can buy

The ice line is the one nobody budgets and everybody needs. At 100 guests that is 250 pounds — five 50-lb bags, or ten 25-lb bags, which is a genuinely large physical object that has to arrive cold, live somewhere cold, and be within reach of the bar.

⚠️ Common Pitfall: the keg that seemed obvious

A half-barrel is 165 servings and costs far less per serving than bottles. It is also 160 pounds full, needs CO₂ or a hand pump, needs a jockey box or a tub of ice to stay cold, cannot be returned partly full, and takes one bartender out of rotation whenever it needs changing.

Use kegs when: beer share is high, the venue has a tap or a cold room, and someone competent owns it.

Use bottles or cans when: it is a raw site, the beer share is under 30%, or nobody on the crew has changed a keg before.

At Wildrye Farm, on a field, at 154 beers, bottles win — and this is a case where the more expensive per-unit option is the right one.


15.3 What to Actually Buy

The forecast produces a shopping list. Here is how to build one that is defensible.

**$17.18 per guest** for a five-hour hosted bar — against a package bar's $34, and against a consumption bar's likely $5,500.

This is why client-supplied alcohol is worth understanding, and §15.5 is why it is not always allowed.

The rules for buying

1. Buy on return. Most retailers and all wholesalers will take back unopened, undamaged, still-labelled bottles. Get it in writing before you buy, and buy 15% over rather than 10% — the marginal bottle is free if it comes back and expensive if you run out.

Beer and sparkling are the exceptions: chilled beer often cannot be returned, and sparkling under a certain price point frequently cannot either. Buy those to forecast, not over it.

2. Buy cheaper than you think, in a specific way. The wine that is drunk at a wedding is drunk standing up, warm-ish, out of a rented glass, by people who are talking. Nobody tastes bottle four. Spend on the first pour — the sparkling for the toast, and anything on the dinner table — and buy the workhorse wine at $11–$14.

This is not cynicism. It is the same principle as Chapter 14's dessert: spend where it registers.

3. Do not buy a full back bar. A "complete" bar is vodka, gin, rum, tequila, bourbon, scotch, whisky, vermouth, triple sec, bitters, four liqueurs, and six mixers. At 100 guests you will serve perhaps 120 spirit drinks and 70% of them will be four things. Buy the four things properly and one bottle each of two others.

4. Chill is a schedule, not a quality. 50 bottles of white wine take four hours to chill in ice water and considerably longer in a fridge that does not exist at a raw site. Chapter 26's run sheet has a line for this at 1:00 p.m., and it is one of the most commonly missed items on any load-in.

📐 Project Checkpoint: the beverage order

Build the Reyes–Whitfield purchase order. You have the forecast method from §15.2, the conversion table above, and the following:

  • 100 guests, of whom 6 are children and 6 are non-drinking or minimal (the dietary matrix has one pregnant guest; there are two guests who do not drink)
  • Bar open 5:10 p.m. to 10:30 p.m. — Wildrye's contract, §9
  • Mixed ages, both families; a rural venue 90 minutes from the city; no shuttle currently planned
  • Mid-September, warm afternoon, cool evening

15.3a Wine on the Table, or Not

💰 Run the Numbers: what wine on the table costs at 100 guests

13 tables × 2 bottles placed at service = 26 bottles, refreshed once on about 8 tables = 34 bottles across dinner.

Bar-only at the same dinner would pour perhaps 26 bottles' worth — and roughly 5 of the 34 are cleared partly full.

Net cost of wine on the table: about 8 bottles, or $104. For which you get the bar unoccupied for the whole of dinner, no guest leaving the table mid-meal, and a room that reads as a dinner rather than as a queue with chairs.

At a family-style wedding this is not close. Put the wine on the table.

Verify

  1. Because the marginal bottle of wine is free and the marginal case of beer is not. Unopened, undamaged, still-labelled wine goes back to the retailer, so over-buying costs a drive. Chilled beer generally cannot be returned, and neither can cheap sparkling — so every case over forecast is money spent. Confirm the return policy in writing before you buy either.
  2. Spirits are ~20% of 615 = 123 drinks, and roughly 70% of them will be four things — typically vodka, gin, bourbon, and tequila or rum, depending on the crowd. That is about 86 pours across four bottles' worth, plus 37 spread across everything else.

Buy two bottles each of the four, one each of two others, and one of whatever Uncle Ray drinks. Eleven bottles instead of the twenty-two on a "complete bar" list — and no guest can tell, because the six bottles you did not buy would have poured two drinks each.


15.4 Throughput, or Why the Queue Forms

Chapter 11 established the arithmetic. This section is what you do about it.

Demand is not spread evenly. It arrives in a spike at the moment the ceremony ends, and the spike is roughly 45% of the first hour's total demand in the first twenty minutes.

At 100 guests with a 70-minute cocktail hour:

The queue never clears during cocktail hour. It clears when everyone sits down for dinner, which is to say it clears by ending the problem rather than solving it.

The five fixes, ranked

Chapter 11 introduced these. Here is what each is worth in drinks.

The ranking is the lesson. Four of the five are free or nearly free, and the one every client asks for first is the most expensive and the least efficient.

Applied to the 176-drink hour: passed drinks remove ~88. Remaining demand: 88. Two bartenders with a batched cocktail: ~53/hr. Still short by 35 — so add the beer-and-wine station, which takes another ~30 off the bartenders. Now it balances, at a cost of two trays, a table, and a decision.

Same bar, same bartenders, opposite outcome — and it is determined by which end of the bar the bartenders start serving from. That is a two-sentence conversation at 3 p.m. with the bar lead, not something the floor plan can enforce.

And put the second bar somewhere else entirely. Two bars twelve feet apart is one bar with a gap in it.

  2. A couple asks for a full spirits bar and is worried about queues. What do you tell them, in one sentence each way?

Verify

  1. Because a passed drink serves a guest who would otherwise have joined a queue, and it serves them without any bar transaction at all. One server with a tray of twenty pre-poured glasses distributes twenty drinks in three or four minutes of walking. A bartender producing 38 drinks an hour would need 32 minutes for the same twenty. Supply-side fixes scale with staff; demand-side fixes scale with trays.
  2. "A full spirits bar and a fast bar are the same trade-off — every made cocktail is forty-five seconds and every beer is eight. I'd rather give you two batched cocktails you actually chose, beer and wine, and a bottle of anything specific under the counter for the people who want it. You'll get the drinks you care about and nobody will stand in a line."

And the other way: "If you want the full bar, that's completely fine — it means a third bartender and passed drinks in the first half hour, and I'd budget about four hundred more." Both answers are legitimate. Price them both and let them choose.


15.5 The Licence, the Liability, and Who Says No

⚖️ This section is educational material, not legal advice. Alcohol licensing, dram shop and social host liability, service rules, and permissible arrangements differ enormously by state, county, and municipality, and they change. Nothing here describes the law anywhere. Confirm with your state's alcohol beverage authority and with an attorney.

Chapter 9 established the four questions. Here they are again, because they are the four questions and you will ask them at every event for the rest of your career.

⚖️ The Clause: the four alcohol questions

1. Who holds the licence? The venue, the caterer, a licensed bar service, or nobody. If nobody, a temporary permit is usually required, with a lead time of 15–60 days.

2. Who may pour? Many jurisdictions require trained or certified servers. Some prohibit unlicensed persons — including friends and family — from serving where alcohol is provided.

3. Is alcohol being sold or furnished? A cash bar is a sale. A hosted bar is furnishing. A "suggested donation" is frequently treated as a sale regardless of what it is called.

4. Who carries liquor liability? It is a separate coverage, it is frequently excluded from general liability, and the party serving should have it. Get the certificate.

And the fifth, which Chapter 9 flagged as the one nobody asks:

5. Who has authority to refuse service? Decide in advance, name them, and tell the couple. It should not be the planner and it should never be a family member.

🚨 When It Goes Wrong: the friend behind the bar

It is common. It is inexpensive. The couple's cousin tended bar in college and has offered.

Depending on jurisdiction, it may be unlicensed service with no coverage behind it. If a guest leaves that wedding and injures someone, the chain of exposure runs to the couple personally — and to the planner who arranged it, was present, and gave directions.

What you do:

  1. Find out. One call to the state ABC and one to the venue.
  2. Tell the couple in writing what you found, in plain language, without drama.
  3. If they choose it anyway, that is their decision. "I told them and they chose it" has to exist in writing, and Chapter 3's bad-news promise is what makes that conversation survivable.
  4. Do not pour. Do not carry. Do not direct the pouring. Chapter 9 §9.1: coordinate, do not perform.

Wildrye Farm's contract §9 removes the question entirely"all alcohol service must be provided by a licensed and insured bartending service." That is a venue that has been advised. Many have not, and their silence is not permission.

That last line has cost people thousands. A couple buys $1,700 of wine in July and finds in August that the bar service's licence does not permit pouring alcohol they did not supply. Ask before you buy.


15.6 Responsible Service Is a Plan, Not a Hope

Everything above is logistics. This is the part that matters.

At some point in your career, at one of your events, somebody will drink too much. It is not a rare event and it is not a sign that anything was done wrong. What determines how it goes is whether there was a plan, written down, that somebody owned before it was needed.

✅ Best Practice: the responsible-service plan

1. A named refusal authority. One person — normally the bar lead. They have the authority, they know they have it, and the couple have been told who it is. It is not the planner, because the planner is not licensed, is not trained, and cannot be in two places. It is never a family member, because refusing a drink to your own uncle at your cousin's wedding is not a job anybody can do.

2. Food, early and continuously. Chapter 14's cocktail-hour arithmetic is a responsible-service measure as much as a hospitality one. A guest who has eaten five canapés is a different guest at 9 p.m. than one who has eaten none. The late-night food at 9:45 is the same tool.

3. Water, everywhere, unasked. Water on every table from the moment guests sit. A water station at the bar that does not require queueing. Guests do not ask for water at a wedding; they drink it if it is in front of them.

4. Non-alcoholic options that are not a punishment. §15.7.

5. Slow the rate, don't stop it. A bar that closes abruptly at 10:30 produces a rush at 10:20. Last call at 10:10, coffee and dessert from 8:15, and the food at 9:45 all flatten the curve without anyone being told no.

6. A departure plan that exists before anyone needs it. Shuttles, a taxi number that has been called in advance and knows the address, a rideshare pin that has been tested for signal, and — at a rural site — the knowledge that neither of those may be available.

7. Somebody sober who is watching. Usually you. Usually the whole night.

🚪 Threshold Concept: a bar is a rate against a duration

Almost everything that goes wrong with a wedding bar goes wrong because someone priced a total instead of modelling a rate.

  • The queue is a rate problem: demand per minute against service per minute.
  • Running out is a rate problem: consumption per hour against inventory.
  • The over-served guest is a rate problem: drinks per hour against food and time.
  • The invoice shock is a rate problem: pours per guest against a per-pour price.

Every one of them is invisible in a total and obvious in a rate. "$3,100 for the bar" tells you nothing. "615 drinks over 320 minutes through two pairs of hands" tells you everything, and it takes the same ten minutes to write.

📜 From the Field

The hardest version of this is not the loud drunk. It is the quiet one — a guest who has been drinking steadily since two in the afternoon, is not being disruptive, is sitting down, and is going to drive home.

Nobody refuses them a drink because they are not asking for one. Nobody notices because they are not making noise. And the planner, who is running a wedding, is the only person in the building whose job includes looking at the room rather than at a task.

This is the argument for the sober person who is watching, and it is the reason the answer to "should I have a drink at my client's wedding?" is no. Not for propriety. For attention.


15.7 The Guests Who Are Not Drinking

Between 10% and 20% of the room is not drinking alcohol, for reasons that include pregnancy, medication, religion, recovery, driving, health, and simply not wanting to. They are guests at the same wedding and they are usually served worse.

⚠️ Common Pitfall: the non-alcoholic option that is a soda gun

The standard offer is: soft drinks, juice, and water. That is what a petrol station offers. A guest holding a plastic cup of orange juice at a black-tie reception is being told, by the drink in their hand, that this part of the evening is not for them.

What to do instead, at almost no cost:

And do not label it. A "mocktail menu" separates the people drinking it. Put it on the same list as everything else and let people order what they want.

This is Chapter 29's material arriving early, and it belongs here because the bar is where it is most visible.

Verify

  1. Four reasons, and the first is the decisive one. The bar lead is licensed and trained; the planner is neither. Refusing service is a regulated act in most jurisdictions and doing it without standing can create exposure rather than remove it. Second, the bar lead is at the bar, which is where the request happens; the planner is somewhere else, always. Third, it is their job and they have done it before. Fourth, a refusal from the bar reads as policy; a refusal from the couple's planner reads as personal, and the guest will find the couple within ten minutes.

What the planner does own: noticing, and telling the bar lead. That is a different act and it is the one nobody else at the wedding is positioned to do. 2. Agree with them and do it anyway, without the label. The objection is to the word, not to the drinks — "mocktail menu" announces that the people ordering from it are a category. Put the non-alcoholic options on the same card as everything else, in the same typeface, without a heading, and let people order what they want. The pregnant guest at table two gets a good drink and nobody has told the room why.


15.8 Closing Down

The end of a bar is a scheduling problem and a safety problem at once.

Three notes on that table.

Last call is announced quietly. An announcement over the microphone produces a stampede; a bar lead telling the six people nearest the bar produces a trickle. The information reaches the same people and it arrives at the rate the bar can serve.

Coffee starts at 8:15, not at 10:00. By 10:00 it is a signal that the evening is over. At 8:15 it is dessert.

Inventory is counted with the bar lead present and signed. Not because anyone is dishonest, but because unopened bottles are going back to the retailer and somebody has to say how many there are. This is a ten-minute job at 11 p.m. that nobody wants to do and everybody is glad was done.

🕐 From the Run Sheet: what leaves with whom

Client-supplied alcohol that is unopened is the client's property and it is going in somebody's car. Name that person in the run sheet. At Wildrye, with a 10 a.m. Sunday removal deadline and no secure storage, anything left on site overnight is a decision, not an accident.


15.9 Practical Notes

On the couple who want to save money on the bar. The honest answer is that the bar is the easiest large line to reduce without anyone noticing — a limited bar, client-supplied alcohol, and a good batched cocktail costs half what a package does and is frequently a better evening. Say so early, because a couple who have already signed a package bar cannot unsign it.

On the couple who want a dry wedding. It happens, for religious, personal, or recovery reasons, and it is entirely fine. The work is in the substitution, not the absence: a genuinely good drinks list, something ceremonial for the toast, and a timeline that does not have a ninety-minute cocktail hour whose only function was drinking. Chapter 22's arc does not require alcohol; it requires momentum.

On tipping. If the bar service's contract includes gratuity, a tip jar on the bar is double-charging and looks it. Ask, and if gratuity is included, no jar. If it is not, agree a gratuity in advance and tell the couple.

On the bar at a raw site. Everything above assumes ice can be kept cold, glasses can be washed or replaced, and there is somewhere to put six cases of empty bottles. At Wildrye, none of those is automatic. Chapter 13's rental order carries the glassware (2.5–3 pieces per guest, and the 180-piece bar gap that was caught rather than double-counted); the ice needs insulated tubs; and the empties need a plan, because 250 bottles is four large bins and they cannot go in the barn.

On signature cocktails. They are worth doing, for three unrelated reasons: they are faster when batched, they cost less than a full spirits bar, and they are one of the few places at a wedding where a couple can put something specific and personal into the room without buying anything. A drink that belongs to a family, a place, or a story is a better use of $180 than almost anything else in Part IV.


15.10 Summary

The bar is a rate against a duration. Model it and almost every failure disappears; price it as a total and every failure is a surprise.

The four models are three pricings of the same generosity plus one that is a different thing. Package is predictable, consumption is unbounded without a cap, cash is a licensing question before it is a social one, and a hosted limited bar is the right answer most of the time.

Forecast from the guest list, not from a rule. Drinkers × (2 in the first hour + 1 per hour after), adjusted for age, transport, weather, and community, plus 10% shrinkage. Then split by mix and convert to bottles, cases, and pounds of ice.

The queue is a design problem before it is a staffing problem. Passed drinks, a batched cocktail, a beer-and-wine station, and two bars instead of one — four fixes that are free, ranked above the one everybody asks for.

Five licensing questions, and the fifth is the one nobody asks. Who holds the licence, who may pour, sale or furnishing, who carries liquor liability, and who has authority to refuse service. Name them. Not you, and never a family member.

Responsible service is seven items on a page, written before the day: a named refuser, food early, water everywhere, real non-alcoholic options, a flattened rate, a departure plan, and somebody sober who is watching.


Spaced Review

From Chapter 11 — the queue arithmetic. Without looking: at 130 guests in a cocktail hour with two bartenders at a mixed-drink bar, what is the backlog at the end of hour one, and what is the most effective fix?

Check **Demand 234, throughput 76, backlog 158.** The most effective fix is **passed drinks**, which remove 40–60% of demand from the bar entirely — and the least efficient is the one clients ask for, which is another bartender.

From Chapter 9 — liquor liability. What is the difference between liquor liability and host liquor liability, and which one applies to a couple whose friend is pouring?

Check **Liquor liability** is carried by a business that *sells or serves* alcohol and is frequently excluded from general liability. **Host liquor liability** applies where alcohol is *furnished but not sold* — the private-party situation — and is sometimes included in or added to an event policy. A couple whose friend is pouring is furnishing, so **host liquor liability** is the relevant coverage — **and it may not respond if the service was unlawful.** That is the whole reason §15.5 exists.

From Chapter 14 — the loaded rate. Sundown's food loads at 1.2775. Does the bar load the same way?

Check **No, and assuming it does is a common error.** Sundown's structure is 20% service charge plus 7.75% tax **on food only** — the tax base is explicitly food. **Alcohol is taxed differently in most jurisdictions**, sometimes at a different rate, sometimes with an excise component, and client-supplied alcohol is taxed at the point of retail purchase instead. **Read the tax line in each contract separately.** A number that was right for the caterer is a guess anywhere else.

Looking Ahead

Chapter 16 leaves the arithmetic and goes to design — the visual story, the concept, and how a mood board becomes a specification.

Bring two things. The batched cocktail you chose here is a design object as much as a drink, and the bar itself is the largest piece of furniture in the room — it is the thing guests approach most often and stand at longest, and in most weddings it is a folding table with a cloth on it.
