The research that changed this field
Kevin Hall's group at the National Institute of Diabetes and Digestive and Kidney Diseases (NIDDK).
If you read one researcher's output from this chapter, make it this one. Hall's group has run the controlled feeding and metabolic ward studies that have tested — and in several cases falsified — the strong claims on both sides of the calories debate. That includes the 2019 ultra-processed food crossover trial cited twice in this chapter, and a series of studies directly testing the carbohydrate-insulin model by holding calories and protein constant while varying carbohydrate and fat.
Search PubMed for his publications. What's notable is that his work has annoyed both camps, which is usually a sign someone is following the data. For: everyone. Genuinely the centre of gravity for this chapter.
Research on metabolic adaptation and weight-loss maintenance. Search for "adaptive thermogenesis weight loss" review articles. The magnitude of adaptation is contested — estimates range from trivial to a few hundred calories — and reading the disagreement is more useful than reading any single number. For: students, clinicians, and coaches.
On measurement, and why counting fails
The doubly labelled water validation literature. Search "doubly labelled water self-reported energy intake validation." This is the body of work establishing that self-reported intake runs substantially below measured expenditure, consistently, in essentially every population studied.
The most useful thing about reading these papers is discovering that the discrepancy applies to researchers and dietitians as reliably as to anyone else — which reframes the whole question from honesty to cognition. For: anyone who has ever suspected a patient, a client, or themselves of lying about food.
FDA guidance on nutrition labelling accuracy (fda.gov). The permitted tolerances between
declared and actual nutrient content are larger than most people assume. Worth ten minutes if you have
ever trusted a label to the calorie.
For: calorie counters.
On the regulation of body weight
Stephan Guyenet, The Hungry Brain (Flatiron, 2017).
The best popular treatment of how the brain regulates food intake and body weight — the "controller" in this chapter's thermostat analogy. Careful with evidence, readable, and unusually good on why "just eat less" describes an outcome rather than a mechanism. For: general readers. Probably the single best recommendation on this page.
The Minnesota Starvation Experiment (Ancel Keys and colleagues, 1940s). Documented in The Biology of Human Starvation and summarized in many accessible accounts.
Thirty-six conscientious objectors underwent semi-starvation under close observation. What happened to their metabolic rate, spontaneous movement, psychology, and eating behavior — during restriction and during refeeding — is the foundational human data on this chapter's §4.6, and it could never be repeated ethically.
Read it also as a warning: several of the psychological effects observed are indistinguishable from what we now call disordered eating, and they were produced by restriction in men who had none beforehand. That connection matters for Chapter 34. For: everyone. One of the most important studies in nutrition, and one of the least cited in popular writing.
The National Weight Control Registry (nwcr.ws).
A long-running registry of people who have maintained substantial weight loss. Useful and frequently over-interpreted: it's a self-selected sample of successes with no control group, so it tells you what maintainers do, not what causes maintenance. Read it with Chapter 2's tools in hand — it's an excellent exercise in spotting survivorship bias in a genuinely valuable dataset. For: anyone interested in maintenance; Chapter 24 handles it properly.
On the constrained energy expenditure question
Herman Pontzer, Burn: New Research Blows the Lid Off How We Really Burn Calories (Avery, 2021).
Pontzer's research — including work with the Hadza — underpins the constrained total energy expenditure hypothesis: the proposal that total daily expenditure responds less to physical activity than the simple additive model predicts, because the body compensates elsewhere.
This is genuinely unsettled science and the book states it more confidently than the evidence currently supports. Read it as a serious hypothesis being argued well, not as settled fact — and notice that if it's right, it strengthens rather than weakens this chapter's §4.6. For: the curious, held at arm's length.
On what to do instead of counting
The Dietary Guidelines for Americans (dietaryguidelines.gov) and MyPlate (myplate.gov).
Free, and deliberately structured around food patterns rather than calorie arithmetic. Whatever their limitations, they are not trying to sell you a number.
Any peer-reviewed work on protein, fiber, and satiety. Search "protein satiety randomized" and "dietary fiber satiety" ** on PubMed. This is the evidence base underneath "same calories, rearranged" — the intervention offered to Renata in Case Study 2, and probably the highest-yield practical idea in this chapter. For: everyone who found §4.4 persuasive and wants to act on it.**
A note on what's deliberately absent
You will find an enormous popular literature arguing either that calories are everything or that calories are nothing. Both genres tend to be well-written, internally consistent, and selectively evidenced.
The tell, in both directions: does the author ever describe a finding that complicates their own position? Hall's group does this constantly, which is why they're the top recommendation on this page. Most popular authors in this area do not, in either camp.
