⚠️ A label is not an advertisement with some facts attached. It is a REGULATED DOCUMENT with an advertisement printed on the other side.
§30.1 — Three Categories

§30.2 — The Panel
⚠️ Compare PER 100 g, always — the only figure manufacturers have no discretion over. ⚠️ SALT = SODIUM × 2.5. EU/UK declare salt; US declares sodium.
⚠️ Serving-size manipulation: a pack of "2.5 servings" · a 30 g cereal serving (weigh what you pour — commonly 50–70 g) · "per biscuit" on a pack of 20 · a bottle declared as two servings. ⚠️ The US 2016 update fixed some of this by requiring serving sizes to reflect actual consumption and dual-column labelling on some packs.
⚠️ Read three numbers: per 100 g · the pack size · what you'll actually eat.
⚠️ §30.3 — The Ingredients List Is the More Informative Half
Descending by weight. ⚠️ The first three ingredients ARE the product.
⚠️ Sugar aliases — sugar · glucose syrup · fructose · HFCS · invert sugar · maltodextrin · dextrose · molasses · honey · agave · rice syrup · barley malt extract · fruit juice concentrate · evaporated cane juice. ⚠️ Using four instead of one moves each further down the list without changing the total.
⚠️ §30.3b — QUID: the rule almost nobody knows
⚠️ If an ingredient is NAMED, PICTURED or EMPHASIZED, its PERCENTAGE MUST BE DECLARED (EU/UK).

💡 ⚠️ THE CLAIM TRIGGERS THE DISCLOSURE. The more prominently a product advertises an ingredient, the more likely a percentage is printed on the back. Go and find it — it is often the single most informative number on the package.
⚠️ No general US equivalent.
§30.4–30.5b — Sugars, Percentages, and Where the Numbers Come From
⚠️ US declares Total Sugars AND Added Sugars. EU/UK declares TOTAL ONLY — so a European reader needs the ingredients list to apply Chapter 18's targets, every time.
%DV / %RI: based on a 2,000 kcal reference person who may not be you. ⚠️ FDA rule of thumb: ≤5% is low, ≥20% is high — and the column doesn't tell you which direction you want.
⚠️ §30.5b: declared values may be CALCULATED from recipes and composition tables, not measured, with tolerances of the order of ±20%.
⚠️ Don't read a panel to the decimal place — 4.8 g and 5.2 g are the same product. But 22 g versus 5 g is real. Ask what the measurement error is before acting on a difference.
⚠️ And "0 g" can mean "below a rounding threshold" — how "0 g trans fat" appeared on products containing partially hydrogenated oil. The INGREDIENT cannot be rounded away.
§30.6 — Front-of-Pack
UK traffic lights · ⚠️ Nutri-Score A–E · warning octagons (Chile, Mexico, Israel) · Health Star Rating.
⚠️ Nutri-Score doesn't capture PROCESSING at all — Chapter 22's argument as a labelling problem: a reformulated Group 4 product can score well; a whole food high in fat can score badly.
⚠️ Warning labels appear to work better than scores at changing purchasing — negative, unambiguous, requiring no comparison. A finding about attention, not nutrition.
⚠️ §30.7 — Provenance vs Quantity: THE MASTER KEY
⚠️ Does the claim contain a number, or could it be converted into one? If not, it's telling you about PROVENANCE and answering a question you didn't ask.

§30.8–30.9 — The Two Vocabularies
Regulated: "low fat" · "fat free" · ⚠️ "reduced X" and "light" (COMPARISONS, not levels) · "source of"/"high in" fibre · protein as a % of ENERGY · ⚠️ "no added sugar" (may still be high in sugars).
⚠️ Health claims are much more tightly controlled than nutrition claims — so if a product could legally make a disease-risk claim, it would. "Supports digestive health" is the strongest thing it's permitted to say (Chapter 16 §16.1).
Unregulated: ⚠️ "natural" (no FDA definition for most uses) · artisan · farm fresh · wholesome · clean · superfood · "no nasties."
§30.10–30.11 — Safety Labelling
⚠️ Declared allergens are MANDATORY, EMPHASIZED and ENFORCEABLE — trust them. (14 in EU/UK; 9 in the US, sesame added recently.)
⚠️ "May contain" is LARGELY VOLUNTARY, unstandardized and NOT risk-graded — which forces people either to avoid everything so labelled or to ignore it. A labelling failure, not a patient failure.
⚠️ "Gluten-free" IS legally defined (≤20 ppm, Codex) — the exception that proves the rule: it has a number because coeliac disease made one necessary. Most other free-from claims have no threshold and no test.
⚠️ §30.11b — Date Marking
⚠️ "USE BY" = SAFETY. "BEST BEFORE" = QUALITY. "DISPLAY UNTIL" = for the shop.
⚠️ You can freeze up to the use-by date, which resets the clock. Treat best-before as advice — dried pasta, tinned tomatoes, rice, flour, spices and frozen vegetables are generally fine well past it.
⚠️ A very large quantity of edible food is discarded on a quality indicator read as a safety instruction — enough that some retailers have removed best-before dates from fresh produce.
⚠️ §30.12 — What the Label Does NOT Tell You
NOVA group and processing (invisible on every panel in the world — the ingredients list is the only proxy) · how fast you'll eat it · satiety · ⚠️ whether the fibre is intact or added · protein quality · ⚠️ cost per gram of protein · environmental impact · ⚠️ what it displaces.
💡 ⚠️ kcal per 100 g IS ENERGY DENSITY — Chapter 22's mechanism, mandatory in the top row, read by almost nobody.

§30.14b — Where There Is No Label
Loose produce · counters and bakeries · ⚠️ restaurants and takeaways · prepacked-for-direct-sale (changed by Natasha's Law) · ⚠️ ALCOHOL, frequently exempt from the nutrition declaration entirely.
⚠️ The unlabelled foods are disproportionately the ones you don't need a label for — Chapter 22's Group 1 is, almost by definition, the group without packaging. ⚠️ Restaurant food is the exception, and it's where the perception gap is widest.
⚠️ §30.13 — The Nine-Minute Protocol
1. Turn it over. 2. First three ingredients. 3. Count the sugar aliases. 4. ⚠️ Find the QUID %. 5. Read kcal/100 g as energy density. 6. Sort claims into provenance and quantity. 7. Check what "reduced" is reduced FROM. 8. Serving size vs pack size vs what you'll eat. 9. Compute one comparison number.
⚠️ THE META-STEP: do this ONCE for the eight to twelve products you buy repeatedly. Decode once, decide once, then shop from a list. Marisol: eleven products, one evening, ongoing time cost ZERO.
🧾 What It's Worth
Branded → own-brand with identical ingredients: −£200 to −£500 · not discarding on best-before: −£150 to −£400 · "superfood" staples → the staple: −£80 to −£300 · unnecessary free-from: −£100 to −£400. ⚠️ Cost: about two hours, once.
Fourteenth chapter where the better choice is the cheaper one — ⚠️ and the first where the mechanism is simply reading the back.
⚠️ The Honest Concession (§30.15)
Label reading is a DEFENSIVE skill. It makes you harder to mislead. ⚠️ It is not, on its own, a dietary intervention — and the evidence that detailed panels change behaviour is weaker than for simple front-of-pack warnings.
Chapter 22's slot swap and Chapter 31's planning do more. ⚠️ A person who reads every label and buys from the same aisles has gained accuracy without gaining much else.

⚠️ Reading labels is a skill. Having something to read is a policy.
⚠️ Label literacy is mostly SUBTRACTION — seven of the nine "what to do" items are about ignoring something. You are learning which two-thirds of the packaging to stop reading.
One Thing to Remember
⚠️ Every one of those six front-of-pack claims was true, and a shopper who read only the front would have been materially wrong about what was in the box.
