Part III — Micronutrients
Chapters 13–16
A man once emptied a plastic shopping bag onto my desk. Nine bottles. He lined them up like chess pieces and said, with real pride, "I take all of these every day."
Walt Prosser is sixty-eight, a retired postal carrier on a fixed income, and he was spending $2,244 a year on those bottles. He'd worked out, correctly, that his diet wasn't great and that nutrients matter. Then he'd been sold an answer by a podcast host with a warm voice and a discount code, and had gone on to take one product for two years that came very close to preventing an emergency room from correctly diagnosing his heart.
We'll get to that story in Chapter 16. I want to use Walt here for something else, because the mistake underneath his shopping bag is the mistake this entire part exists to correct.
Walt reasoned like this: nutrients are good → I might be low in some → more must be better.
Each step feels obvious. The first is true. The second is possible and testable. And the third is where the entire supplement industry lives, because it is where the reasoning quietly stops resembling biology.
The shape of Part III
Micronutrients are the vitamins and minerals you need in milligram or microgram quantities. You cannot make most of them. Run out and you get sick in specific, dramatic, historically documented ways — scurvy, rickets, beriberi, pellagra, goiter, anemia. Nutrition science essentially began as the study of these deficiency diseases, and that origin story is why the field spent decades assuming that if a little fixes a catastrophe, a lot must produce a benefit.
It doesn't. Repeatedly, expensively, and sometimes fatally, it doesn't.
Chapter 13 — Vitamins. 🚪 What each one does, where to get it, and who is actually deficient — a much shorter list than the supplement aisle implies. This chapter also properly explains the DRI framework (EAR, RDA, AI, UL), which almost nobody understands and which makes half the arguments about "recommended amounts" evaporate on contact. And it delivers the threshold concept the whole part turns on: nutrient status is not nutrient intake, and supplementing someone who isn't deficient almost never helps. The history here is brutal and instructive — beta-carotene, vitamin E, and folate each looked wonderful in observational data and then behaved badly, sometimes very badly, in randomized trials.
Chapter 14 — Minerals. Iron, calcium, magnesium, zinc, selenium, iodine, potassium, sodium. The real-world deficiency patterns — which are strongly patterned by age, sex, pregnancy, diet, geography, and income, and which the marketing ignores entirely. Heme versus non-heme iron and the absorption enhancers and inhibitors that determine whether the iron in your lentils ever reaches your blood. The genuinely contested sodium evidence. And the gap that hurts athletes: low ferritin with normal hemoglobin — iron-deficient without being anemic, which standard screening misses and which is exactly what's wrong with Devi.
Chapter 15 — Water and Hydration. How much you actually need — not eight glasses, and the origin of that number is itself a small masterclass in how a recommendation mutates. Thirst as a good-enough signal for most people most of the time. Urine color. Estimating your own sweat rate. When electrolyte replacement is genuinely warranted, and when it is flavored sugar with a marketing budget. And hyponatremia — the risk from drinking too much, which has killed athletes and which nobody sells a product to prevent.
Chapter 16 — Supplements. 🪞 The $50 billion industry. Why DSHEA 1994 means supplements are regulated roughly like food rather than like drugs, and what that means for whether the bottle contains what the label says. Third-party certification. The short list that genuinely works. The long list that doesn't. And the shorter, far more important list of what is actively dangerous — including drug–nutrient interactions your physician doesn't know about because you didn't mention the bottles. What makes this part different from the rest of the book
Most of this book is about arguments where the evidence is genuinely contested. Part III is not like that. On micronutrients, the science is unusually settled and the public understanding is unusually wrong, and the gap between those two facts is filled with money.
So expect a different rhythm. Fewer 🟡 verdicts, more ✅ and more ❌, and a lot of 🧾 Cost check callouts, because the correct response to most supplement claims is not a debate about mechanism — it's multiplying the monthly price by twelve and asking what else that money could do.
Expect also a fair amount of ⚠️ When to see a professional. More than anywhere else in the book, this part touches things where the right answer is get a blood test rather than read a chapter. Whether you should take iron is not a philosophical question. It's a ferritin question, and taking iron you don't need is genuinely harmful.

Start with the vitamins, and with the reason "more is better" felt so obvious.
