Case Study 2 — The Protein Aisle: Twelve Products, One Nutrient, Ten-Fold Pricing
A market and label case. The products are composites of real categories; the pricing, the label mechanics, and the regulatory situation are not.
Setup
Case Study 1 was a woman who couldn't afford to be under-eating protein and was. This one is the opposite problem: an entire market built on people who are already eating enough.
I costed twelve products from a supermarket and a supplement retailer, all of them either marketed on protein content or commonly bought for it. The unit is cost per 20 g of protein, because that's roughly one meaningful serving and it makes everything comparable.
The spread is more than tenfold. Here it is.

What the spread actually buys
The bottom of the table: $0.25–$1.20
Everything in the top nine rows is food. One to five ingredients. No added sugar to speak of. And every one of them delivers protein alongside other things you want — lentils bring fiber, iron and folate; eggs bring choline, selenium and B12; tuna brings omega-3; yogurt brings calcium and live cultures; tofu brings calcium and isoflavones.
Note where whey protein powder sits: mid-table, at $0.92. This surprises people who expect a book like this to be hostile to it. It isn't. Protein powder is food in a convenient form, it's competitively priced against chicken breast, and for a person genuinely struggling to hit 1.6 g/kg — a large individual, a plant-based eater, someone with a small appetite, someone in a deficit — it is a perfectly sensible tool.
The verdict in §8.12 was 🟡 rather than ❌ for exactly this reason. Convenience is a legitimate thing to buy.
The top of the table: $2.10–$3.60
This is where it goes wrong, and it goes wrong in a specific and consistent way.
The "high protein" cereal delivers 10 g of protein — half a meaningful serving — alongside 8–12 g of added sugar and fifteen-plus ingredients. Look at what's actually being sold: a refined breakfast cereal, the same product it was five years ago, with a protein claim on the front and a price increase. The protein is often added as isolated soy or pea protein specifically so the claim can be made.
The protein bar costs more than ten times what lentils do for the same protein. It typically carries added sugars and sugar alcohols (Chapter 7 §7.11 — which is why people report digestive complaints from bars and blame the protein), twenty-plus ingredients, and a wrapper.
Protein water is the purest expression of the category: $3.60 for 20 g of protein dissolved in water, delivering nothing else at all. Not fiber, not micronutrients, not satiety of any consequence — a protein bar at least occupies your mouth for a minute.
The label mechanics
Two things worth knowing before you read a front-of-pack protein claim.
"High in protein" is a regulated nutrient content claim, but the threshold is lower than people assume — in many jurisdictions a product qualifies if a defined proportion of its energy comes from protein, or if it exceeds a set amount per serving. A product can qualify while delivering 10 g, which is under half a useful dose, and the claim says nothing about what else is in it.
Serving sizes do a lot of work. A cereal claiming "10 g protein" often achieves it by defining the serving as cereal plus milk. Read the small print — the protein in the box may be 6 g and the milk is supplying the rest, which you'd have got anyway.
🔬 The five-second protein triage. Front of pack says protein. Do this:
- How many grams per serving? Under 15 g is not a protein food, whatever the front says.
- Is the serving realistic? Does it include milk you'd add anyway?
- Added sugars line. Bars and cereals frequently carry more sugar than a biscuit.
- Cost per 20 g. Divide. If it's over $2, you're buying a snack with a claim on it.
- What else does it deliver? Fiber, micronutrients, calcium? Or nothing?
The uncomfortable part
Here's what makes this case study worth including rather than just a list of prices.
The people buying protein bars are overwhelmingly not the people who need more protein.
The market for protein-claim products skews toward younger, more affluent, more health-engaged consumers — people who train, read labels, and typically already eat 1.2–1.6 g/kg without trying. They are, in other words, the population for whom the marginal gram of protein does the least.
Meanwhile Ruth Kaminsky, at 0.72 g/kg, on a fixed income, two doors down from a man spending $2,244 a year on supplements, was told nothing by anyone for a decade.
💡 Aha moment. The protein market is aimed almost exactly away from the protein deficit. It's the same pattern as Chapter 5's metabolism aisle and Chapter 16's supplement cabinet: the products concentrate where the need is lowest, because that's where the willingness to pay is highest.
This is not a conspiracy. It is what happens when a nutrient becomes a marketing category — demand follows enthusiasm, not deficiency. And the practical consequence is that the group with the largest genuine protein gap in the entire population is served by nothing at all, because "eat an egg" is not a product.
Analysis
1. Cost per 20 g of protein is the single most useful number in this category, and no label prints it. It takes ten seconds to calculate and it reorders the entire aisle.
2. Protein powder is not the villain. Mid-table, honestly priced, and a reasonable tool. The expensive nonsense is the snackified end — bars, waters, cookies, crisps — which are ultra-processed foods (Chapter 22) with a nutrient claim attached.
3. A protein claim is a claim about one nutrient, and nothing else. It's silent on added sugar, sugar alcohols, fiber, micronutrients, ingredient count, and cost. A "high protein" cereal with 12 g of added sugar is a sugary cereal that has hired a lawyer.
4. The market is inversely targeted. Highest marketing spend where the need is lowest. The population with the genuine gap — older adults, people on tight budgets, people with poor appetite — is reached by none of it.
5. Everything here came from arithmetic. No study, no expertise. Divide price by protein, read the added sugars line, check whether the serving includes milk. That's the whole skill.
