Part IV — Myths and Debates
Chapters 17–22
This is the part you probably bought the book for.
Everything so far has been construction: the evidence ladder, the physiology, the macronutrients, the micronutrients. Necessary, and — I'll admit it — not what makes anyone open a nutrition book at eleven at night. What makes people open a nutrition book at eleven at night is that someone they love just sent them a video about seed oils and they don't know what to say.
Now you have the tools. So let's use them on the six arguments that are actually happening.
An important distinction: myths and debates are not the same thing
The title of this part has two words in it, and the difference between them matters more than almost anything else in the book.
A myth is a claim that lost. The evidence came in, it went the other way, and the claim survives on marketing, intuition, or the sheer pleasure of the story. Your liver does not need a cleanse. Celery juice is celery. There is no food that burns more calories than it contains. These are not open questions, and pretending they are — in the name of open-mindedness — is its own kind of dishonesty.
A debate is a claim that is still live. Serious researchers disagree, in the literature, with data. The ultra-processed food question is a real debate. So is a good chunk of the sodium question. So is the residual uncertainty about linoleic acid. Treating a genuine debate as a settled myth is just as much a failure of evidence literacy as the reverse — and it's the failure that skeptics commit, constantly, because it feels like rigor.
The chapters below are sorted accordingly, and the verdicts are too. You will see plenty of ❌ in this part. You will also see 🟡 and ⚗️ more often here than anywhere else in the book, and when you do, it is not me hedging. It is the actual state of the evidence, reported.
The six
Chapter 17 — Myth-Busting. The densest 🔬 chapter in the book: detoxes, cleanses, superfoods, alkaline water, celery juice, "boosting" your metabolism and your immune system, negative-calorie foods, blood-type diets. But the verdicts are the least interesting part. What the chapter is really doing is dissecting why these specific ideas are sticky — the recurring shapes (purity, restriction as virtue, a single hidden cause, the suppressed truth) that let you recognize the next myth before it has a name.
Chapter 18 — The Sugar Debate. 🚪 Is sugar toxic? Added versus natural. Sucrose, glucose, fructose, and high-fructose corn syrup compared without theatrics. What the liver actually does with fructose, and where the "sugar is like alcohol" analogy holds and where it breaks. Sugar-sweetened beverages as the one genuinely distinct case. And the historical episode — the Sugar Research Foundation's influence on mid-century research — which is real, and which is routinely used to license claims it does not support. This chapter carries the threshold concept the whole part depends on: the dose makes the poison.
Chapter 19 — The Seed Oil Debate. 🪞 The most viral nutrition claim of the decade, taken completely seriously. Where it comes from — omega-6 to arachidonic acid to inflammation, plus oxidation, plus hexane extraction, plus a genuinely enormous change in the food supply over a century. What human trials and substitution analyses show. The places where the critics have a real point, and the much larger place where the human evidence goes the other way. Steelmanned properly, then answered.
Chapter 20 — Organic, GMO, and "Clean Eating". What each label legally means, which is not what most buyers think. The pesticide-residue evidence and the specific methodological problems with the annual "Dirty Dozen" list. Organic's small nutritional differences and mixed environmental trade-offs. The GMO safety consensus — alongside the non-safety objections to industrial agriculture, which are legitimate and which get smuggled into safety arguments where they don't belong. And "clean eating" as a category error with a real psychological cost that Chapter 34 will pick up.
Chapter 21 — Intermittent Fasting. Time-restricted eating, 16:8, 5:2, alternate-day, OMAD. The gap between the animal literature (striking) and the human literature (much less so). What happens to the benefits when trials match calorie intake between groups — largely, they shrink. Autophagy claims versus autophagy evidence in humans. Circadian and meal-timing effects that are real. Who it genuinely helps, who it doesn't, and who should not do it at all. Camila's three night shifts a week make this concrete.
Chapter 22 — Ultra-Processed Food. ★ 🚪 🪞 The most important live debate in nutrition, and the chapter I found hardest to write. The NOVA classification and the serious objections to it. The Hall crossover trial at the NIH, what it established and what it didn't. The candidate mechanisms — energy density, eating rate, food matrix, hyper-palatability, displacement, additives — and how little we can currently distinguish between them. And the practical question a person has to answer while researchers argue: what do you do when the evidence says something is wrong but not what?
How to read this part
These six chapters are independent. Unlike Parts I and II, you can read them in any order, or read one and ignore the rest. Each one stands alone.
Two warnings, in opposite directions.
If you came here as a believer in one of these claims: I've tried to state your position in the strongest version its smartest advocate would recognize, before saying anything against it. If I've failed at that, the argument is worth less. But please notice when the evidence goes against something you've built a habit around, and notice what your first reaction is. That reaction is the subject of Chapter 1.
If you came here as a skeptic: watch for the opposite failure. Finishing Part IV believing that every popular claim is false is not skepticism — it is contrarianism, which is credulity wearing a lab coat. Some of these claims survive. Fermented foods look modestly good. Sugar-sweetened beverages really are worse than their calories. Time-restricted eating really does help some people, for reasons that turn out not to be the ones its advocates cite. The point of an evidence framework is that it can return yes.
What you'll be able to do at the end of Part IV
- Take apart a viral nutrition claim in about ten minutes, out loud, without being obnoxious
- Recognize the four or five recurring shapes that sticky myths take
- Explain the difference between a myth and a live debate, and why conflating them is a failure
- Give an honest account of sugar, seed oils, organic food, fasting, and ultra-processed food — including the parts that don't support your prior position
- Sit with 🟡 as a real answer rather than a dodge
