⚠️ Do these two things before reading anything
1. Read your jurisdiction's organic permitted-substances list.
US: the USDA National List of Allowed and Prohibited Substances (ams.usda.gov). EU: the organic
production regulations' permitted plant protection products. UK, Canada, Australia: national
equivalents.
⚠️ Fifteen minutes. It will change how you read an organic label permanently. Look for copper.
2. Read one year of your national residue monitoring report.
US: the USDA Pesticide Data Program annual summary (ams.usda.gov/datasets/pdp). EU: EFSA's
annual report on pesticide residues (efsa.europa.eu). UK: the Expert Committee on Pesticide
Residues in Food.
⚠️ Look up one item you buy organic. Find the percentage below tolerance and the measured levels. Almost nobody does this in their lifetime, and it is the entire basis of §20.4.
On the Dirty Dozen
Read EWG's own methodology (ewg.org/foodnews) — they publish it, and reading it is more useful
than reading a critique of it. ⚠️ Notice what the ranking uses and what it doesn't.
Then search for the peer-reviewed critiques — terms like "dirty dozen pesticide residue toxicological relevance" and "consumer risk pesticide residues EWG methodology." ⚠️ The substitution-effect argument — that the list may reduce produce purchasing — has been studied, and the work is worth reading rather than taking from me.
And read the counter-critique too. ⚠️ Some of the criticism of EWG has come from sources with their own commercial interest, and Chapter 1 §1.5 applies to them as well. Applying the question evenly is the discipline; applying it selectively is just picking a side.
On organic and nutrition
Smith-Spangler C et al. (2012), Annals of Internal Medicine — the Stanford review. Barański M et al. (2014), British Journal of Nutrition — the Newcastle meta-analysis, open access. Średnicka-Tober D et al. (2016), British Journal of Nutrition — organic milk and meat composition.
⚠️ Read Newcastle's methods section and then read the published correspondence responding to it. That exchange is a better education in how meta-analyses can differ than any summary of the conclusions, and it's the source of §20.6's "largely not in conflict."
On the cohort: Baudry J et al. (2018), JAMA Internal Medicine — NutriNet-Santé. ⚠️ Read the limitations section, which is candid, and note the baseline characteristics table — it is the clearest picture of healthy-user bias you will find anywhere.
On the environmental question
Search "organic conventional yield gap meta-analysis" — the major analyses are widely cited and the crop-by-crop variation is the interesting part.
Then search "life cycle assessment organic conventional per unit output" — ⚠️ this is where the per-hectare/per-kilogram divergence becomes concrete.
On copper: search "copper accumulation vineyard soils organic viticulture" and the EU's decisions restricting copper-based plant protection products. ⚠️ This is a real literature and it is almost absent from consumer-facing discussion of organic farming.
Our World in Data (ourworldindata.org) on land use and agriculture — free, well-sourced, and
unusually careful about which denominator it's using.
On GM crops
National Academies of Sciences, Engineering, and Medicine (2016), Genetically Engineered Crops:
Experiences and Prospects — ⚠️ free to read online at nap.edu. This is the single most
authoritative document on the topic, it is long, and it is notably even-handed: it finds no
substantiated health risk difference and is candid about the socioeconomic and agronomic issues.
If you read one thing on this topic, read its summary chapter.
On the Séralini episode: search for the retraction notice from Food and Chemical Toxicology (2013) and the subsequent republication. ⚠️ Read the retraction reasoning yourself — it's a useful case in what retraction does and doesn't mean, and in how a retracted study continues to circulate.
On golden rice: search "golden rice regulatory approval Philippines vitamin A" and the history of its development and delay. ⚠️ Read at least one account sympathetic to the opposition — the concerns about seed systems, agricultural sovereignty and whether biofortification substitutes for addressing poverty are real arguments, even where you conclude the delay was wrong.
On glyphosate
IARC Monograph Volume 112 and EFSA's and the EPA's assessments — ⚠️ read the WHO's own explanatory material on hazard identification versus risk assessment first, or the apparent contradiction will look like a scandal rather than a definitional difference.
On the occupational question, which is the more open one: search "glyphosate agricultural health study non-Hodgkin lymphoma" and read both the cohort findings and the case-control meta-analyses. ⚠️ This is where the genuine scientific disagreement lives, and it is not about your breakfast cereal.
On food safety — the part that actually matters
Your national food safety agency's home cooking guidance. US: foodsafety.gov and the FDA's
produce-washing advice. UK: the Food Standards Agency. EU/elsewhere: national equivalents.
⚠️ Short, boring, free, and it addresses the risk in §20.12b that is measured in deaths.
On the burden: search "CDC foodborne illness estimates" or your national surveillance equivalent. ⚠️ Read the numbers once and the chapter's comparative-risk section will not need defending.
On higher-risk groups: specific guidance exists for pregnancy, immunosuppression and older adults — Listeria, unpasteurized dairy, deli meats, reheating. This is targeted, evidence-based precaution and it is worth ten minutes.
On clean eating and orthorexia
Steven Bratman's own writing on the term he coined, including his later reflections on how it has been used — ⚠️ he is notably more careful than most people citing him.
Search "orthorexia nervosa validity ORTO-15 critique" for the honest state of the measurement literature. ⚠️ The instruments are genuinely contested and I'd rather you knew that than took the association on trust.
And search "clean eating disordered eating adolescents" for the behavioural association literature.
Chapter 34 handles this properly. ⚠️ If any part of §20.13 described someone you know — or you — that chapter is worth reading early rather than in sequence.
A note on what to be careful with
⚠️ This chapter has a failure mode that is worse than the belief it corrects.
The wrong conclusion: "Residues don't matter, GMOs are fine, organic is a scam, and anyone who cares about this is irrational."
Three things that survive intact:
1. ⚠️ The livestock antibiotic provision addresses antimicrobial resistance, which is a serious, documented, and worsening public health problem. It is the strongest case on the page and it is not about produce.
2. Farming systems have real consequences — nitrogen runoff, biodiversity, soil. ⚠️ "I prefer this system" is a legitimate reason to pay more, and this book has no business arguing anyone out of it.
3. ⚠️ Occupational pesticide exposure is a genuine and under-addressed harm. The people at risk are farm workers, and they are almost entirely absent from a debate conducted by consumers about consumers.
And the symmetric warning, for the reader who came in the other way:
⚠️ If you finish this chapter still believing conventional produce is meaningfully dangerous at measured levels, go and read your monitoring report (top of this page) before deciding what to believe. §20.14's Project Checkpoint asks you to look up one number. If you skip it, you are holding a position about a measurement you have declined to look at — which is a shape Chapter 17 named.
What this chapter actually asks of you is narrow: ⚠️ separate the health claims from the values positions, put your precaution where the uncertainty is largest and the cost lowest, and never buy fewer vegetables to buy purer ones.
